What kitchen skills are appropriate for different ages, and how do I teach knife safety?

Ages 6–7: washing produce, tearing lettuce, stirring cold ingredients, measuring with cups and spoons, spreading with a butter knife. Ages 8–9: using a peeler, cracking eggs, making simple recipes independently (sandwiches, salads), using the microwave. Ages 10–12: cutting soft foods with a proper knife (teach the 'claw grip' and 'bridge' technique), using the stovetop with supervision, following full recipes, and basic meal planning. For knife safety, start with a child-safe knife (nylon or serrated), demonstrate proper grip and cutting surface, and always supervise until you are confident in their skill.
